theWI Adderbury & District WI – Last Minute Christmas Pudding – Tuesday, 22nd December 2015 & Update

Dear Ladies, I’ve not had time to make any Christmas puddings this year so far, so imagine my delight upon finding this recipe for a Quick Microwave Christmas Pudding on the NFWI website, which is made and cooked in 40 minutes!  How well I remember steaming sessions lasting over six hours per pudding, when I always cooked two, plus a spare for the next year…those were the days.   Of course, I also made the Christmas cake, mincemeat, mincepies, brandy butter and a yule log.

 

 

 

 

Here’s the recipe and instructions and I’ll let you know how I get on….!

Quick Microwave Christmas Pudding

This recipe was provided by Angela Horlock Devon Federation and very tasty and quick it is.
No need for preparation prior to the big day or hours of steaming!

Quick Microwave Christmas Pudding

Total Time:
Serves: Makes 1 kg pudding

Ingredients:

  • 38g fresh Wholemeal Breadcrumbs
  • 75g Plain Flour
  • 1 tsp Mixed Spice
  • 75g Suet or Butter
  • 100g Soft Brown Sugar
  • 175g Mixed Dried Fruit
  • 125g Raisins
  • 25g Glace Cherries, if liked
  • 25g Almonds, chopped, (optional)
  • 1 medium Apple, grated
  • Grated rind and juice of half Orange and Lemon
  • 3 tbsp Brandy
  • 2 small Eggs Beaten
  • 2 tbsp Milk
  • 1 tbsp Black treacle

Method:

  1. Line 2pt pudding basin with cling film
  2. Mix all ingredients and add all juices and liquids, put into basin
  3. Cover with cling film and pierce
  4. Cook medium power for 6 mins
  5. Rest 3 mins
  6. Cook medium power 5 mins
  7. Rest 20 mins. Serve
  8. You can add extra brandy to the pud after cooking if wished

28th December 2015 Update – Christmas pudding update

Ladies,  I did make this Quick Microwave Christmas Pudding found on the NFWI Recipe page from a recipe given by a WI Member from Devon Federation and I am pleased to say how well the recipe made up and cooked in a very short space of time and it was delicious and very, very quick!  So many thanks to Angela Horlock and all concerned – it was a great success with brandy butter and cream  and without the recipe I would not have had any Christmas pudding this year!
